Ingredients

  • 10 ears of corn
  • ¼ cup salted butter
  • 6 tablespoons salted butter
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon fresh cracked black pepper

Instructions

  1. Shuck the corn and cut the kernels off the cob.
  2. In a large cast-iron skillet, melt the butter over medium heat.
  3. Add the corn, salt, and pepper to the skillet and stir well to combine.
  4. Cook, stirring occasionally, for about 8-10 minutes until the corn is tender and starts to brown. Be sure to scrape the bottom of the pan to release any bits that may have stuck.
  5. Taste and adjust the seasoning if needed. Serve immediately.

Notes
  • For extra flavor, you can sauté 1 cup of chopped onions in the butter first and cook until softened (about 8-10 minutes), then continue with the recipe.
  • The corn can be reheated in a skillet or microwave until warmed through.
  • Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.

1. Can I use frozen corn instead of fresh?
Absolutely! If fresh corn isn’t available, frozen corn works just as well. Just measure about 6 cups of frozen corn to replace the 10 ears of fresh corn. The cooking time might be a little quicker, but you’ll still get that delicious crispy texture!

2. Can I make this recipe without a cast-iron skillet?
You can definitely make this in any skillet you have. While a cast-iron skillet is ideal for even heat distribution, a nonstick or stainless steel skillet will work just fine. Just make sure it’s large enough to hold all the corn.

3. How can I make the corn creamier?
If you love a creamier texture, try adding a splash of heavy cream or milk to the pan. Start with just a tablespoon, then adjust to your preference. You’ll get that extra richness without much effort!

4. What’s the best way to store and reheat leftovers?
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, simply toss it back in a skillet over medium heat, adding a little butter or water to bring back that moisture and flavor.

5. Can I add cheese to the corn for extra flavor?
Yes! Adding cheese, like grated Parmesan or crumbled feta, can enhance the flavor and make the corn even more decadent. Stir in the cheese toward the end of cooking, so it melts into the corn nicely.
