For Shrimp Alfredo Pasta

  • Fettuccine or Penne Pasta – I recommend fettuccine, but penne works just as well for a bite-sized alternative.
  • Shrimp – Peeled and deveined for easy prep. The shrimp should be cooked just until golden and opaque to keep them tender.
  • Olive Oil – Used to cook the shrimp and give them a nice sear.
  • Onion – A small onion, finely chopped, adds a sweet and savory base flavor to the sauce.
  • Unsalted Butter – This helps create a rich, creamy sauce.
  • Garlic – Fresh garlic is key for that aromatic flavor that balances the richness of the cream.
  • Chicken Broth – Adds depth to the sauce.
  • Heavy Whipping Cream – The star ingredient for making the creamy sauce that coats the pasta perfectly.
  • Parmesan Cheese – Freshly grated parmesan adds that salty, savory, and nutty flavor to the sauce.
  • Paprika – A small amount to season the shrimp and give the dish a bit of color and warmth.
  • Salt & Pepper – To taste, for seasoning both the shrimp and the sauce.
  • Fresh Parsley or Basil – Optional, for garnish and added freshness.

Ingredients:

  • 3/4 lb fettuccine or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 tbsp unsalted butter
  • 1 garlic clove, minced
  • 1/3 cup chicken broth
  • 2 cups heavy cream
  • 1/3 cup freshly grated parmesan cheese
  • Salt and pepper, to taste
  • A pinch of paprika
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Cook Pasta: Boil the fettuccine (or penne) in salted water according to package directions. Drain and set aside. Do not rinse the pasta as it helps the sauce adhere better.
  2. Cook Shrimp: Season the shrimp with salt, pepper, and a sprinkle of paprika. Heat 1 tbsp oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 1-2 minutes on each side, until golden pink and opaque in the center. Remove the shrimp and set aside.
  3. Prepare Sauce: In the same skillet, melt 2 tbsp butter over medium-high heat. Add the chopped onion and sauté until softened and golden. Stir in the minced garlic and cook for an additional minute. Pour in the chicken broth and simmer, reducing by about 75%, scraping the bottom of the pan to lift any caramelized bits.
  4. Make Alfredo Sauce: Stir in the heavy cream and simmer for 2 minutes. Gradually add the parmesan cheese, stirring constantly until the sauce becomes smooth and creamy. Remove from heat to avoid the cheese separating from the cream. Season with salt, pepper, and a pinch of paprika.
  5. Combine: Add the cooked shrimp and the drained pasta to the sauce. Toss to coat everything evenly in the creamy sauce. Garnish with fresh parsley or basil, and extra parmesan cheese, if desired. Serve immediately.

  1. Can I use any type of pasta for this recipe?

Yes! While fettuccine is the classic choice, penne, spaghetti, or any pasta you prefer will work just fine. Just remember to adjust the cooking time as per the pasta’s instructions.

  1. Do I really need to use chicken broth in the sauce?

Nope! Chicken broth adds a nice depth of flavor, but if you prefer to skip it, a splash of lemon juice can work as a substitute. The sauce will still taste amazing!

  1. How can I avoid the sauce from separating?

To prevent the sauce from separating, make sure not to boil the sauce after adding the cheese. Simply simmer the sauce gently over low heat and stir until the cheese is fully melted and the sauce is smooth.

  1. Can I use pre-grated parmesan cheese?

While it’s always best to use freshly grated parmesan for the smoothest texture, you can use pre-grated cheese if that’s what you have. Just note that it might not melt quite as smoothly in the sauce.

  1. How do I cook the shrimp perfectly?

The key is to cook the shrimp just until they turn pink and opaque—about 1-2 minutes per side. Overcooking them will make them rubbery, so keep an eye on them!
