Ingredients:

  • 10 ounces boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • ¼ cup chicken broth
  • 1 (14.5 ounce) can diced tomatoes with basil, garlic, and oregano, undrained
  • 1 cup Swanson® Chicken Broth
  • 4 ounces uncooked penne pasta
  • ¾ cup water
  • 4 cups baby spinach

Directions:

  1. Season the chicken pieces to your liking. Heat olive oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until browned on all sides, stirring frequently. Once cooked, remove the chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion and cook until tender-crisp, stirring occasionally. Pour in the chicken broth and bring to a boil, scraping up any flavorful bits stuck to the skillet.
  3. Add the diced tomatoes (with their juice), chicken broth, uncooked penne, and water. Bring everything to a boil. Once boiling, reduce the heat to medium and let it simmer for about 10 minutes or until the penne is tender. Stir occasionally to ensure even cooking.
  4. Return the chicken to the skillet and continue to cook for an additional 2 minutes, ensuring the chicken is fully cooked. Stir in the fresh spinach and cook for another minute until it’s wilted and combined.

  1. Can I swap the pasta shape?
Absolutely! While penne is great for soaking up the sauce, you can use any short pasta you have on hand, like rotini, fusilli, or even shells. Just make sure to follow the cooking times on the pasta packaging.
  2. What if I don’t want to use chicken broth?
If you prefer not to use chicken broth, you can replace it with vegetable broth or even water. The broth adds depth and richness, so if you use water, you might want to add extra seasonings to balance the flavors.
  3. Can I use frozen spinach instead of fresh?
Yes, frozen spinach works perfectly! Just make sure to thaw and drain it well to remove excess water before adding it to the pan. This will keep your sauce nice and thick.
  4. How can I make this spicier?
For some extra heat, stir in red pepper flakes with the onions, or add a dash of hot sauce at the end. Adjust the spice level based on your personal taste.
  5. Can I make this ahead of time?
While this dish is best served fresh, you can prepare the chicken and vegetables earlier in the day. When you’re ready to eat, just follow the steps to cook everything together for a quick, satisfying meal.
