Ingredients

For the Chimichurri Sauce:
  • ½ cup olive oil
  • 2 tablespoons apple cider vinegar
  • ½ cup fresh parsley, finely chopped
  • 4 garlic cloves, finely chopped or minced
  • 2 small red chilies (or 1 larger red chili), deseeded and finely chopped (about 1 tablespoon)
  • ¾ teaspoon dried oregano
  • ½ to 1 teaspoon coarse salt (adjust to taste)
  • ½ teaspoon black pepper (adjust to taste)
For the Chicken:
  • 4 skinless, boneless chicken thighs or breasts
  • A pinch of salt, to season

Instructions

  1. Make the Chimichurri Sauce: Combine all the chimichurri ingredients in a bowl and mix well. Let it sit for 5-10 minutes to allow the flavors to meld and infuse the oil. You can also prepare this ahead of time and refrigerate it for up to 24 hours before serving. This will make about 1 cup of chimichurri.
  2. Prepare the Chicken: Season the chicken with a pinch of salt. Pour 4 tablespoons of the chimichurri into a shallow dish and coat the chicken with it. Let it marinate for 20 minutes, if you have time. Reserve the remaining chimichurri sauce for later.
  3. Cook the Chicken: Heat a small amount of oil in a grill pan or skillet over medium-high heat. Cook the chicken for 5-6 minutes on each side until golden, crispy, and cooked through. Once cooked, set the chicken aside and let it rest.
  4. Serve: Spoon the remaining chimichurri sauce (about 2-3 tablespoons per person) over each piece of chicken. Alternatively, you can serve the sauce in small dipping bowls for guests to enjoy.

Notes

  • For an authentic chimichurri flavor, use fresh parsley and adjust the amount of chili according to your spice preference.

  1. How long should I marinate the chicken in chimichurri sauce?

It’s best to marinate the chicken for at least 30 minutes to allow the flavors to soak in. If you have more time, marinating it overnight will give it even more flavor.

  1. Can I substitute chicken breasts for chicken thighs?

Yes, you can! Chicken breasts will work just fine. Keep in mind they’ll cook a bit faster and might be less juicy than thighs, but they’re still delicious when paired with the chimichurri sauce.

  1. Is fresh parsley a must for the chimichurri sauce?

Fresh parsley gives the sauce its signature flavor, but if you’re in a pinch, you can use dried parsley. The taste won’t be as vibrant, but it’ll still work well in a pinch!

  1. Can I make the chimichurri sauce ahead of time?

Absolutely! In fact, making the chimichurri sauce a day in advance lets the flavors really develop. Just store it in the fridge until you’re ready to use it.

  1. What’s the best way to cook the chicken?

You can grill or pan-fry the chicken. Grilling gives a smoky flavor, while pan-frying creates a crispy golden crust. Choose your preferred method to get a perfectly cooked chicken with chimichurri!
