2 small red chilies (or 1 larger red chili), deseeded and finely chopped (about 1 tablespoon)
¾ teaspoon dried oregano
½ to 1 teaspoon coarse salt (adjust to taste)
½ teaspoon black pepper (adjust to taste)
For the Chicken:
4 skinless, boneless chicken thighs or breasts
A pinch of salt, to season

Make the Chimichurri Sauce: Combine all the chimichurri ingredients in a bowl and mix well. Let it sit for 5-10 minutes to allow the flavors to meld and infuse the oil. You can also prepare this ahead of time and refrigerate it for up to 24 hours before serving. This will make about 1 cup of chimichurri.
Prepare the Chicken: Season the chicken with a pinch of salt. Pour 4 tablespoons of the chimichurri into a shallow dish and coat the chicken with it. Let it marinate for 20 minutes, if you have time. Reserve the remaining chimichurri sauce for later.
Cook the Chicken: Heat a small amount of oil in a grill pan or skillet over medium-high heat. Cook the chicken for 5-6 minutes on each side until golden, crispy, and cooked through. Once cooked, set the chicken aside and let it rest.
Serve: Spoon the remaining chimichurri sauce (about 2-3 tablespoons per person) over each piece of chicken. Alternatively, you can serve the sauce in small dipping bowls for guests to enjoy.
