Why I Love Making These Greek Chicken Bowls

There are some recipes that require a whole production.

This is not one of them.

The chicken gets a quick marinade, the vegetables get chopped, and then everything gets piled into bowls. That’s basically the whole game.

And yet the finished bowl feels like a proper meal.

You’ve got warm, savory chicken alongside all those cool, crunchy, creamy things. The feta and olives bring the salty little punch, the lemon wakes everything up, and the tzatziki pulls it all together.

It’s also one of those recipes that is VERY forgiving.

Want more cucumber? Go for it.

Extra feta? Obviously.

A little more tzatziki? I support this decision.

That’s why I love these bowls for weeknight dinners and meal prep. Everyone can make their bowl exactly how they like it, and nobody has to complain about the vegetables. We have achieved dinner peace.

How To Make Greek Chicken Bowls

1. Get Everything Ready

First, let’s make life easy for ourselves.

Prepare the tzatziki, whether you’re making it homemade or using your favorite store-bought version. Then chop up all of the salad ingredients so everything is ready to go.

Tomatoes. Cucumber. Bell pepper. Avocado. Red onion.

Olives and feta are ready too.

Basically, get all your little bowl components lined up before you start cooking.

Future you will be VERY happy about this.

2. Marinate the Chicken

Add the chicken to a zip-top bag or bowl with the olive oil, oregano, salt, pepper, and garlic powder.

Give everything a good toss until the chicken is nicely coated.

Let it hang out for at least 20 minutes.

Have more time? You can let it marinate for up to 8 hours.

This is one of those tiny steps that makes a big difference because the chicken gets a chance to soak up all those savory, herby flavors before it hits the grill or skillet.

3. Cook the Chicken

Heat your grill or skillet over medium heat.

Add the chicken and cook for 4–5 minutes per side, until the chicken reaches an internal temperature of 165°F.

Then—and this is important—let it rest for 10 minutes.

I know.

You just cooked the chicken and you want to eat it.

But give it those few minutes. Then slice it into bite-sized pieces and admire how juicy it looks.

4. Build Those Beautiful Bowls

Now comes the fun part.

Divide the chicken and all those colorful salad ingredients between four shallow bowls.

Add the feta and Kalamata olives.

Drizzle with olive oil.

Squeeze over some fresh lemon juice.

Add salt and black pepper to taste.

And then?

The tzatziki.

Be generous.

5. Add the Pita and Eat

Cut the pita into wedges and serve it alongside the bowls.

Because having warm pita available for scooping up chicken, vegetables, feta, and tzatziki is not optional in my imaginary Greek café.

Okay, maybe it is technically optional.

But I wouldn’t skip it.

Expert Tips

A few little things that make these bowls even better:

Let the chicken marinate. Even the minimum 20 minutes gives the chicken time to pick up all that oregano and garlic flavor.

Give the chicken a proper rest. Those 10 minutes are worth it. Resting helps keep the chicken tender and juicy before you slice it.

Chop everything before you start cooking. This recipe moves quickly once the chicken is ready, so having the vegetables prepared makes assembly ridiculously easy.

Go easy on the salt at first. Feta and Kalamata olives already bring plenty of salty flavor to the bowl. You can always add more at the end.

Don’t forget the lemon. It might look like a little finishing touch, but that fresh squeeze of lemon is what makes all the creamy, salty, savory flavors pop.

Keep the avocado for later. If you’re making these bowls ahead, add the avocado when you’re ready to eat for the freshest texture.

Recipe Variations

Okay, this is where you can have some fun.

The recipe as written is delicious, but Greek Chicken Bowls are basically begging you to make them your own.

Change Up the Protein

Not feeling chicken?

You can swap it for grilled shrimp, steak, or a plant-based protein.

Same bowl situation. Completely different dinner.

Make It Gluten-Free

Skip the pita and serve your bowl with cooked white rice, quinoa, or cauliflower rice instead.

Easy.

Add More Good Stuff

This is a bowl. Bowls love toppings.

Try adding chickpeas, radishes, artichoke hearts, carrots, or spinach.

You can also throw in fresh dill or scallions for a little extra freshness.

Add Hummus

If you are a hummus person, this is your moment.

A scoop of hummus adds another creamy element and fits right in with everything else happening in the bowl.

Serving Suggestions

These bowls are pretty much a meal all by themselves.

But if you’re setting out a whole spread, add some extra pita, hummus, olives, or fresh vegetables alongside them.

I also love putting all the components on the table separately and letting everyone build their own bowl.

More feta?

Sure.

Extra tzatziki?

Absolutely.

No onions?

Fine.

A mountain of olives?

You do you.

It’s an easy dinner that somehow makes everyone feel like they got exactly what they wanted.

Storage

If you’re saving leftovers, keep the components separate whenever possible.

Store the cooked chicken and chopped vegetables in airtight containers in the refrigerator. Keep the tzatziki in its own container, and store the pita separately so it stays fresh instead of getting soggy.

When you’re ready for round two, assemble your bowl and add the olive oil, lemon juice, seasoning, and tzatziki right before eating.

For meal prep, I’d also keep the avocado separate and add it when you’re ready to eat.

That way you get the creamy, fresh avocado situation instead of sad, tired avocado.

Nobody wants sad avocado.

Make-Ahead Tips

These bowls are especially good for meal prep because most of the work can happen ahead of time.

You can marinate the chicken and chop the vegetables in advance. Store everything separately in the refrigerator, then cook and assemble when you’re ready.

If you’re preparing several bowls for the week, keep the chicken, vegetables, feta, olives, pita, and tzatziki separate until serving.

Add the avocado, lemon juice, olive oil, and final seasoning when you’re ready to eat.

Fresh. Easy. Done.

And that is exactly what we want.

You get juicy chicken, crunchy vegetables, creamy avocado, salty feta, Kalamata olives, bright lemon, cool tzatziki, and warm pita all hanging out in one very happy bowl.

Make it for dinner.

Make it for meal prep.

Put out all the toppings and let everyone build their own.
