Ingredients

  • ½ teaspoon garlic powder

For the Cucumber Salad

  • ½ cucumber, sliced or chopped (see note)
  • ½ cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 1 tablespoon freshly squeezed lemon juice

  • Pinch of fresh dill (optional)

 

Instructions

  1. Prepare the Marinade:
    • In a bowl, whisk together all marinade ingredients.
    • Add chicken, toss to coat, cover, and refrigerate for at least 30 minutes (up to 2 hours for extra flavor).
  2. Make the Cucumber Salad:
    • While the chicken marinates, mix all cucumber salad ingredients in a bowl. Set aside.
  3. Cook the Chicken:
    • Heat a grill or skillet over medium heat.
    • Remove chicken from the marinade and cook for 5–6 minutes per side, until fully cooked.
  4. Assemble the Gyros:
    • Lay pita bread on a plate or clean surface.
    • Layer with lettuce, cooked chicken, cucumber salad, feta cheese, and tzatziki sauce.
