Ingredients

For the Chicken Gyros

  • 1 ½ pounds chicken tenderloins (slice thick pieces in half lengthwise)
  • White or whole wheat pita bread
  • Crumbled feta cheese
  • Green leaf lettuce
  • 5-Minute Tzatziki Sauce (recipe linked or see below)

For the Marinade

  • ½ cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon salt
  • ¼ teaspoon cracked black pepper
  • ½ teaspoon crushed red pepper flakes
  • 1 tablespoon minced garlic
  • ½ teaspoon garlic powder
  • 1 tablespoon Herbs de Provence or Italian seasoning (see note for fresh herb substitution)

For the Cucumber Salad

  • ½ cucumber, sliced or chopped (see note)
  • ½ cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper, to taste
  • Pinch of fresh dill (optional)

 

Instructions

  1. Prepare the Marinade:
    • In a bowl, whisk together all marinade ingredients.
    • Add chicken, toss to coat, cover, and refrigerate for at least 30 minutes (up to 2 hours for extra flavor).
  2. Make the Cucumber Salad:
    • While the chicken marinates, mix all cucumber salad ingredients in a bowl. Set aside.
  3. Cook the Chicken:
    • Heat a grill or skillet over medium heat.
    • Remove chicken from the marinade and cook for 5–6 minutes per side, until fully cooked.
  4. Assemble the Gyros:
    • Lay pita bread on a plate or clean surface.
    • Layer with lettuce, cooked chicken, cucumber salad, feta cheese, and tzatziki sauce.
    • Fold like a sandwich or roll up.
  5. Serve & Enjoy!  

Notes

  • Using Fresh Herbs: Substitute dried herbs with 1 teaspoon each of finely chopped fresh thyme, oregano, and parsley.
  • Cucumber Choice: An English cucumber is ideal since half can be used in the tzatziki and the other half in the salad.
  • Add Bell Peppers: Sautéed bell peppers make a great addition—highly recommended!
