Ingredients:

  • 1 pound bow tie pasta
  • 1 cup diced cheddar cheese
  • 1 cup cooked chicken (diced or shredded, preferably grilled or rotisserie chicken)
  • 3 tablespoons finely chopped white onion
  • ½ cup thawed frozen peas
  • ½ cup finely chopped red bell pepper
For the Dressing:
  • 1 cup mayonnaise
  • 3 tablespoons sweet relish
  • 2 teaspoons granulated sugar
  • 1 teaspoon yellow mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
 

Instructions:

  1. Cook the bow tie pasta according to package instructions until al dente, then drain and set aside to cool.
  2. In a small bowl, whisk together the mayonnaise, sweet relish, sugar, mustard, apple cider vinegar, and a pinch of salt and pepper.
  3. In a large mixing bowl, combine the cooked pasta, diced cheddar, cooked chicken, onion, peas, and red bell pepper.
  4. Pour the dressing over the pasta mixture and toss everything together until evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving for the best flavor.
