Recipe Notes
Pasta: Large shells work especially well because they catch the cheesy beef and salsa mixture. Cook them according to the package directions and drain well.
Salsa: Use your favorite jarred salsa. Choose mild, medium, or hot depending on how much heat you prefer.
Taco seasoning: Use 2 tablespoons of taco seasoning or 1 packet, as called for in the recipe.
Ground beef: Brown the beef well, then drain the excess fat before adding the taco seasoning and water.
Don’t rush the seasoning: Let the ¾ cup water cook away after adding the taco seasoning before returning the pasta to the pot.
Serving: This pasta is best served immediately while the cheddar is melted and the mixture is saucy. Add crunchy tortilla chips on top if desired.
Storage: Keep cooled leftovers in an airtight container in the refrigerator for 3–4 days, or freeze for up to 3 months.
Reheating: Reheat gently on the stovetop over medium-low heat or in 30-second intervals in the microwave. Add a splash of water or broth if the pasta seems dry.
