Ingredients
3 cups elbow macaroni
1 ½ cups mayonnaise
⅓ large onion, minced
¼ cup fresh parsley, chopped
2 tablespoons yellow mustard
2 teaspoons rice vinegar
1 teaspoon white sugar (adjust to taste)
¾ teaspoon celery seed
½ teaspoon salt
3 hard-boiled eggs, chopped
Instructions
Cook the Pasta:
Bring a large pot of lightly salted water to a boil.
Add the macaroni and cook for about 8 minutes, or until al dente.
Drain and rinse under cold water to cool.
Prepare the Dressing:
In a large bowl, mix together the mayonnaise, minced onion, chopped parsley, mustard, rice vinegar, sugar, celery seed, and salt until well combined.
Combine Everything:
Add the cooled macaroni and chopped eggs to the bowl with the dressing.
Stir well to evenly coat all ingredients.
Chill and Serve:
Cover and refrigerate for at least 30 minutes before serving.
