A classic mashed potato side dish with a smooth, rich texture. Warm milk and cream are incorporated gradually, while sour cream or cream cheese adds the finishing touch.
12tbspbutter, softened and cubed, salted or unsalted is fine
3/4cupwhole milk, warmed
1/2cupheavy cream, warmed
1/4cupsour cream or cream cheese
Salt and pepper to taste, start with half a teaspoon of each and add more as needed
Instructions
Peel and rinse the potatoes. Depending on their size, cut them into halves or quarters.
Transfer the potatoes to a large Dutch oven or stock pot. Add cold, salted water until the potatoes are covered by at least one inch.
Bring the water to a boil. Cook the potatoes until they are fork tender, about 15 minutes. Drain, then return them to the hot pot.
While the potatoes cook, warm the ¾ cup whole milk and ½ cup heavy cream over low heat in a small saucepan, or heat them in the microwave.
Leave the drained potatoes in the hot pot for about 5 minutes so excess moisture can evaporate.
Add the 12 tablespoons softened butter and mash the potatoes until they reach your preferred consistency.
Gradually add the warm milk and cream while mashing. Stop once the potatoes have the consistency you want; you do not need to use all of the milk or cream.
Stir in the ¼ cup sour cream or cream cheese. Season with salt and pepper to taste.

Recipe Notes
The recipe can be doubled, tripled, or halved.
Store leftover mashed potatoes in an airtight container in the refrigerator for up to 3 days. Reheat them gently in a saucepan over low heat, adding a little milk as necessary to maintain their moisture and creamy consistency. They can also be reheated in the microwave, stirring occasionally. Add extra milk or butter if needed.
For freezing, allow the mashed potatoes to cool completely. Place them in a freezer-safe airtight container or freezer bag and freeze for up to one month. Thaw in the refrigerator before reheating on the stovetop or in the microwave. Add a little milk during reheating if necessary.
Prepare the mashed potatoes according to the instructions above. Once cooled, transfer them to an oven-safe and microwave-safe bowl or dish and cover tightly.
Take the potatoes out of the refrigerator one hour before reheating.
Oven: Cover the dish with foil and bake at 350°F for about 30 minutes, or until heated through. Stir occasionally to help the potatoes warm evenly.
Microwave: Cover and heat at 50% power in 60-second intervals, stirring after each interval. Mix in hot milk if the potatoes become too thick.
Slow cooker: Transfer the potatoes to a slow cooker and set it to low. Depending on the size of the slow cooker, allow 2 to 3 hours for the potatoes to heat through. Stir occasionally and add hot milk if the mashed potatoes are too thick.
