Ingredients

  • ¼ cup crumbled feta cheese
  • 1 tbsp harissa or pesto
  • 1 large egg
  • 1 tbsp fresh dill or basil, chopped
  • Avocado oil cooking spray
  • 1 small tortilla

 

Instructions

  1. Melt the feta: Heat a small skillet over medium heat and sprinkle feta cheese around the edges of the pan. Let it melt and crisp for 2-3 minutes.
  2. Cook the egg: Add harissa or pesto in the center, then crack an egg over it. Cook for 3-5 minutes until the egg reaches your preferred doneness and the cheese forms a golden crust.
  3. Garnish & plate: Sprinkle fresh dill or basil on top. Carefully lift the crispy feta and egg with a spatula and transfer it to a plate.
  4. Prepare the tortilla: Spray the skillet with cooking oil and toast the tortilla until lightly golden, about 1-2 minutes per side.
  5. Serve: Place the crispy feta and egg on the tortilla and enjoy!
