Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 medium carrot, grated
  • 3 ribs celery, minced
  • 1 medium yellow onion, finely minced
  • 1 pound 80/20 ground beef
  • 1 pound ground pork
  • 1 (24-ounce) jar store-bought marinara
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 cup heavy cream
  • 1 pound wide noodles, such as pappardelle or tagliatelle, cooked, for serving
  • Freshly grated parmesan cheese, for serving

Instructions

  • Heat the olive oil in a large saucepan over medium heat. Once the oil is glistening, add the carrots, celery, and onion and cook, stirring, until just tender, about 4 minutes. Add the ground beef and ground pork and cook, breaking up the meat with a spoon, until the meat is browned, about 8 minutes.
  • Stir in the marinara sauce, salt, and pepper and simmer, stirring occasionally, for about 30 minutes, or until the sauce thickens. Stir in the heavy cream and remove from heat.
  • Serve the bolognese over the cooked pasta and sprinkle with the Parmesan.

Recipe Notes

  • Marinara: Use a good-quality store-bought marinara that you already enjoy. Since it makes up the tomato base of the sauce, its flavor makes a difference.
  • Ground meat: Stick with 80/20 ground beef along with the ground pork. The combination gives the Bolognese a rich, hearty texture and plenty of flavor.
  • Browning the meat: Break the beef and pork apart with a spoon as they cook. Let the meat brown before adding the marinara for the best flavor.
  • Heavy cream: Add the cream only after the sauce has simmered and thickened. It gives the finished Bolognese its smooth, rich finish.
  • Pasta: Pappardelle and tagliatelle are both great choices because the wide noodles hold onto the thick meat sauce really well.
  • Make ahead: The Bolognese sauce can be prepared ahead and reheated when needed. For the best results, cook the pasta fresh just before serving.
  • Storage: Keep leftover sauce in an airtight container in the refrigerator. Store the pasta separately when possible so it doesn’t soak up too much sauce.
  • Freezing: The Bolognese sauce can also be frozen for longer storage. Thaw it in the refrigerator before gently reheating and serving with freshly cooked pasta.
