Enoki Mushrooms with Garlic, Scallion, and Soy Sauce

Ingredients:

  • 2 packets (14 oz / 400g) enoki mushrooms, trimmed (remove 1 inch from the roots)
  • 2 tbsp oil
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce (use tamari for gluten-free option)
  • 1 tsp sugar
  • 2 scallions, thinly sliced

 

Instructions:

  1. Prepare the Enoki Mushrooms: Bring a pot of water to a boil. Once boiling, blanch the enoki mushrooms for about 2 minutes. Drain and place them on a serving plate.  
  2. Make the Sauce: In a frying pan, heat the oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, stir in the soy sauce and sugar. Bring the mixture to a boil, then remove from heat. Add the sliced scallions and mix everything together.  
  3. Serve: Pour the garlic-scallion soy sauce over the blanched enoki mushrooms. Serve immediately.
