Ingredients:

  • 2 lbs chicken tenders, thighs, or breasts
  • 2 tbsp olive oil
  • Garlic Parmesan Butter Sauce:
    • 1 stick butter
    • 8-10 cloves garlic, minced
    • 1/2 cup grated parmesan
    • 1 tbsp hot sauce
    • 2 tsp red pepper flakes
    • 1/3 cup fresh parsley, minced
  • Chicken Seasonings:
    • 2 tsp paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp salt
    • 1/2 tsp pepper

 

Instructions:

  1. Prepare the Skewers:
    • Soak wooden skewers in water for 30 minutes. Cut the chicken into 3" pieces. In a large bowl or zip-top bag, toss the chicken with olive oil and the seasonings (paprika, garlic powder, onion powder, salt, and pepper). Thread the chicken onto skewers, packing the pieces tightly together to keep them juicy.
  2. Make the Garlic Parmesan Sauce:
    • In a microwave-safe bowl, melt the butter and then add minced garlic. Stir in the grated parmesan, hot sauce, red pepper flakes, and fresh parsley. Whisk until fully combined. If the sauce separates, add 1-2 tbsp softened butter and stir to re-emulsify.
  3. Cook the Chicken:
    • Preheat the air fryer to 400°F. Place 2-3 skewers in the air fryer basket. Cook for 5 minutes, then flip, baste with the garlic parmesan sauce, and cook for another 2 minutes. Flip again, baste with more sauce, and cook for another 5-6 minutes, or until the internal temperature reaches 165°F. Total cook time: 12-14 minutes (adjust depending on your air fryer). Once cooked, baste again with the reserved clean sauce and garnish with extra parmesan.
  4. Alternative Cooking Methods (Oven or Grill):
    • Oven: Preheat to 450°F. Place the skewers on a rimmed baking sheet lined with foil. Cook for 14 minutes, flipping halfway through. Baste with garlic parmesan sauce during cooking. Switch to broil for 2 minutes to brown the tops, then finish with a final basting and sprinkle with parmesan.
    • Grill: Preheat to medium-high heat. Grill each side of the skewers for 5-6 minutes, basting with sauce throughout. After grilling, baste with the remaining sauce and sprinkle with parmesan.
