Ingredients

  • 4 cups frozen cut green beans, see notes for canned or fresh beans
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp soy sauce
  • 1/2 tsp black pepper
  • 1/4 tsp seasoned salt, more to taste
  • 1 1/2 cups crispy fried onions, divided

Instructions

  • Preheat the oven to 350°F.
  • Bring a medium pot of salted water to a boil. Add the frozen green beans and boil until tender crisp, about 2 to 3 minutes.
  • In a large bowl, combine green beans with soup, milk, soy sauce, pepper, salt, 1 cup of crispy onions, and cheese if using (see notes). Transfer to a 2-quart baking dish.
  • Bake uncovered for 30 to 35 minutes or bubbly.
  • Remove from oven and stir. Top with remaining onions and return to oven for an additional 10 minutes or until golden.

Recipe Notes

  • This casserole can be prepared with frozen, canned, or fresh green beans.
  • Frozen green beans: Use the 4 cups listed in the recipe and cook them briefly before assembling the casserole.
  • Canned green beans: Replace the frozen beans with 2 (14.5 ounce each) cans of cut green beans, drained.
  • Fresh green beans: Use 1 ½ pounds fresh green beans, trimmed and simmered for about 7-8 minutes.
  • The condensed cream of mushroom soup creates the creamy base of the casserole. Another condensed “cream of” soup, such as cream of celery, can also be used.
  • Crispy fried onions provide both seasoning and crunch, with some mixed into the casserole and the rest added near the end of baking.
  • For a cheesy version, add 1 ½ cups shredded cheddar cheese mixed into the sauce
  • You can also add fried mushrooms, onions, garlic, and/or shallots.
  • If using cheese, it can either be blended into the soup mixture or sprinkled over the casserole after stirring. Mixing it into the sauce distributes the cheese throughout the dish.
  • In place of frozen beans, use either: drain 2 (14.5 ounce each) cans of cut green beans OR 1 ½ pounds fresh green beans, trimmed and simmered for about 7-8 minutes.
  • To make twice the amount, prepare the recipe as directed and transfer it to a 9×13-inch baking dish. Increase the cooking time by 10 minutes.
  • The casserole can be assembled up to 48 hours before baking.
  • Prepare the casserole as directed, but keep the crispy onion topping in a separate container or bag. Refrigerate both until needed.
  • Take the casserole out of the refrigerator at least 30 minutes before it goes into the oven. Add the crispy onions at the appropriate stage and bake according to the recipe. A chilled casserole may require up to 10 additional minutes of cooking time.
  • For easier transport, prepare and bake the casserole as directed but stop before the final 10 minutes of baking.
  • Cover the dish with aluminum foil and insulate it with a towel inside a cooler or insulated bag.
  • At your destination, add the remaining crispy onions and finish baking until the casserole is thoroughly heated, bubbly, and golden on top.
  • Assemble the casserole as directed and freeze it before baking.
  • Thaw it overnight in the refrigerator, then bake according to the recipe. Add approximately 10 minutes to the baking time if needed.
  • Place leftovers in an airtight container and refrigerate for 2-3 days.
