Hobo Casserole is a filling, oven-baked dinner made with layers of thinly sliced potatoes, seasoned ground beef, creamy soup, and plenty of melted cheese. With familiar ingredients and straightforward preparation, it makes a practical choice for a hearty family meal.
1can(10.7 oz) condensed cream of mushroom soup, with or without garlic added
1can(10.7 oz) condensed cream of chicken soup
1can (12 oz) evaporated milk
1/2cupmilk
2cupsshredded cheese

Instructions
Heat the oven to 375°. Spray a 9x13 inch pan with cooking spray.
Cook the beef, onions and garlic in a large skillet until the beef is no longer pink. Drain well. Season with salt and pepper.
Place a layer of potatoes over the bottom of a 9x13 inch pan, then add half of the beef.
Combine the mushroom and chicken soup together and mix in the milk and evaporated milk with a whisk. Pour half of the soup over the beef and sprinkle with half of the cheese.
Repeat the layers and top with the remaining cheese.
Place a piece of tinfoil over the pan, making sure to tent it so it doesn't bake to the cheese.
Place in the oven and bake for 1 hour. Remove the tinfoil and continue baking for an additional 30 minutes.
Remove and let stand for 10 minutes before slicing on a wire rack.

Recipe Notes
Slice the potatoes thinly. Keep the slices about the same thickness so they become tender and cook evenly.
Drain the beef well. Removing the excess grease before layering helps keep the casserole creamy without becoming oily.
Tent the foil. Make sure the foil doesn’t touch the cheese while the casserole bakes, or the melted cheese may stick to it.
Keep the layers even. Spread the potatoes, beef, creamy soup mixture, and cheese evenly throughout the pan so every serving gets a little of everything.
Don’t skip the resting time. Let the casserole stand for 10 minutes after baking. This gives it time to settle and makes it easier to slice and serve.
