Ingredients:

  • 3 cups cooked chicken
  • 6-8 cups chicken broth
  • 2 cups all-purpose flour
  • 2 tablespoons butter
  • 1/2 teaspoon baking powder
  • Salt (to taste)
  • About 1 cup of milk (or slightly less)

Instructions:

  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. Cut the butter into the dry ingredients using a fork or pastry cutter, until the mixture resembles coarse crumbs.
  3. Gradually add the milk, mixing with a fork until the dough comes together into a ball.
  4. Lightly flour a clean surface for rolling out the dough. Use a rolling pin to roll it out to your desired thickness (about 1/4 inch).
  5. Flour your cutter (a pizza cutter works great) and cut the dough into squares—about 2 inches by 2 inches. Don't worry if they aren’t all the same size or shape—it's okay if they’re a bit uneven!
  6. Carefully transfer the dumplings to a plate, dusting each layer with flour to prevent sticking. If you're not cooking them immediately, you can layer them with wax paper and flour on a cookie sheet, or freeze them for later use.
  7. To cook the dumplings, bring the chicken broth to a boil in a large pot. Drop the dumplings in one at a time, stirring gently as you add them. The extra flour on the dumplings will help thicken the broth.
  8. Let the dumplings cook for 15-20 minutes, or until they are no longer doughy in the center.
  9. Stir in the cooked chicken, and your homemade chicken and dumplings are ready to serve!
