Sloppy Joe Tater Tot Casserole

This hearty casserole combines a saucy ground-beef filling with melted sharp cheddar and a crisp layer of tater tots. Ingredients

  • 1 pound lean ground beef
  • 1/2 medium yellow or sweet onion, diced
  • 1/2 green bell pepper, diced
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup ketchup
  • 1 1/2 tbsp packed brown sugar
  • 1 tbsp dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 (8-ounce) package sharp cheddar cheese, shredded
  • 1 (30-ounce) package Frozen tater tots, you will only use 2/3 of bag

Instructions

  • Heat the oven to 400 degrees. Lightly grease a 9×13-inch baking dish.
  • Place the ground beef, diced onion, and diced bell pepper in a large nonstick skillet. Cook while breaking the beef into crumbles with a wooden spoon. Continue cooking until the beef is completely cooked and the onion and bell pepper have softened.
  • Drain off any accumulated fat.
  • Add the tomato sauce, ketchup, brown sugar, mustard, Worcestershire sauce, garlic powder, and black pepper to the skillet. Stir until everything is evenly combined.
  • Bring the mixture to a simmer and cook for 3 to 5 minutes. Remove the skillet from the heat.
  • Transfer the sloppy joe mixture to the prepared baking dish and spread it evenly across the bottom.
  • Scatter a little more than half of the shredded cheddar cheese over the beef mixture.
  • Arrange the tater tots over the cheese, using approximately 2/3 of the bag.
  • Sprinkle the remaining cheddar cheese over the tater tots.
  • Bake for about 25 minutes, or until the tater tots have turned golden brown.

Recipe Notes

  • Tater tots: You’ll use about 2/3 of a 30-ounce bag of frozen tater tots. Regular tots or tater tot rounds both work well.
  • Cheese: Sharp cheddar gives the casserole a rich, flavorful finish. Shredding an 8-ounce block yourself is a great option, although pre-shredded cheese can be used when you’re short on time.
  • Make ahead: The sloppy joe filling can be prepared up to 48 hours in advance. Refrigerate it until you’re ready to assemble and bake the casserole.
  • Make it spicy: For some extra heat, add 1/4 to 1/3 teaspoon cayenne pepper to the sloppy joe filling.
  • Storage: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheating: Reheat leftovers in the oven for the best tater tot texture.
