Recipe Notes

  • Chicken: Boneless chicken breasts are used in the original recipe, but chicken tenders or thighs can also work.
  • Italian dressing mix: Use the seasoning dry, straight from the packet. Do not prepare it as salad dressing first.
  • Cream cheese: Bring it to room temperature before making the sauce so it melts and incorporates more easily.
  • Cream soup: Cream of mushroom, cream of celery, or cream of broccoli can be substituted for the cream of chicken soup.
  • Keep the sodium down: Unsalted cream of chicken soup is a good choice since the dressing mix and broth already add seasoning.
  • Add vegetables: Frozen broccoli or spinach can be added to the crockpot with the chicken.
  • Shredded chicken: After cooking, shred the chicken with two forks and stir it into the sauce if you prefer. This can also help stretch the recipe into more portions.
  • Serving: Serve the chicken and creamy sauce over cooked angel hair pasta. Rice or mashed potatoes are also good alternatives.
