Ingredients:

  • 1 cup coconut milk (about half a can)
  • 1/3 cup creamy peanut butter
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar 
  • 1 tablespoon fresh ginger, peeled and minced
  • 3 cloves garlic, minced
  • 3 boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • 1 tablespoon lime juice

Optional garnishes:

  • Chopped peanuts
  • Fresh cilantro
  • Sliced green onions

Instructions:

  1. In a 6-quart slow cooker, mix together coconut milk, peanut butter, soy sauce, honey, apple cider vinegar, ginger, and garlic until well combined.
  2. Add the diced chicken to the slow cooker, ensuring each piece is coated with the sauce.
  3. Cover and cook on low for 4-5 hours until the chicken is tender.
  4. Stir in the lime juice and the cornstarch slurry, mixing gently to thicken the sauce.
  5. Cook for an additional 20 minutes until the sauce reaches your desired consistency.
