Ingredients

  • 4 large eggs
  • cup milk
  • ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 8 thick slices of bread (such as Texas Toast)
  • 2 heaping cups of crispy rice cereal or crushed cornflakes

Instructions

Preheat & Prepare:

  • Preheat a griddle to 350°F or heat a skillet over medium heat.
  • Pour the crushed cereal into a shallow dish.

Make the Batter:

  • In a separate shallow dish or blender, combine eggs, milk, flour, sugar, salt, cinnamon, and vanilla extract.
  • If whisking by hand, a few lumps from the flour are okay.

Coat the Bread:

  • Dip each slice of bread into the egg mixture, making sure to coat both sides.
  • Press the bread into the crushed cereal, flipping to evenly coat both sides.

Cook the Toast:

  • Melt a small amount of butter or grease the skillet/griddle with cooking spray.
  • Place coated bread slices on the hot surface and cook for a few minutes until golden brown.
  • Flip and cook the other side until crisp and golden.
