For Fiesta Chicken
- Chicken Breasts – 2 lbs. of boneless, skinless chicken breasts. This is the main protein for your dish, offering lean and juicy meat.
- Hidden Valley Ranch Mix – 1 oz. packet of spicy or fiesta ranch mix. This brings a creamy, zesty flavor that’s the heart of the dish.
- Black Beans – 1 (15 oz) can of black beans, drained. These add a nice texture and are a great source of fiber.
- Whole Kernel Corn – 1 (15.25 oz) can, drained. Sweet corn balances the flavors with a slight crunch and sweetness.
- Rotel® Tomatoes – 1 (10 oz) can of Rotel® tomatoes, undrained. These add a flavorful burst with a hint of spice.
- Cream Cheese – 8 oz. block of cream cheese. This helps create a creamy base, making the dish rich and smooth.
- Yellow Onion – 1 small onion, diced. Adds a mild sweetness and depth of flavor.
For Serving
- Tortillas – Use your favorite kind to wrap up the fiesta chicken.
- Sour Cream – Optional, for a cooling contrast to the spice.
- Shredded Cheese – For an extra indulgent touch on your tacos or burritos.

Tips:
- To reduce spiciness:
- Use mild Rotel tomatoes instead of the regular spicy kind.
- Substitute with a 16 oz jar of mild salsa.
- Use a can of diced tomatoes instead.
- Choose a regular ranch mix instead of the spicy or fiesta variant.
- To lower the fat content:
- Omit the cream cheese.
- Serve with fat-free or low-fat sour cream.
- Use low-fat tortillas or serve it on a salad.
Serving Ideas:
- On tortillas or in tacos
- Over white rice as a burrito bowl, topped with cheese
- In crunchy taco shells
Variations:
- You can substitute chicken thighs, cooked ground chicken, or turkey. Leftover rotisserie chicken can also be used (cook for a shorter time).
- Other types of beans, like pinto beans or red beans, work well too.
- If you can't find a spicy ranch mix, a regular ranch packet will suffice.

- Can I use frozen chicken?
Yes, you can use frozen chicken breasts! Just pop them straight into the slow cooker and cook for the same amount of time. No need to thaw beforehand. Just make sure the chicken reaches an internal temperature of 165°F before serving!
- What if I can’t find spicy ranch seasoning?
Not a problem! Simply swap in a regular ranch packet and if you want a little kick, add some chili powder or a pinch of cayenne. It’s still delicious and super simple.
- How can I make this less spicy?
To dial down the heat, use mild Rotel tomatoes or substitute with a can of regular diced tomatoes. You can also use mild salsa instead of Rotel. Don’t forget, swapping in a regular ranch packet will help too!
- Can I prepare this ahead of time?
Absolutely! You can assemble the chicken and all the ingredients in the slow cooker and store it in the fridge for up to a day before cooking. Or freeze it uncooked for up to 3 months, and just thaw it overnight in the fridge before cooking.
- What’s the best way to serve Fiesta Chicken?
The possibilities are endless! Serve it on warm tortillas for tacos, over rice for a burrito bowl, or in crunchy taco shells for a crispy treat. Don’t forget to top with sour cream, cheese, and avocado for extra flavor!
