These wraps have been a long time coming.
Over the years, I’ve played with different versions of vegan Caesar salads—some tasty, some forgettable.
But a truly satisfying, portable Caesar wrap that checks all the boxes?
That took some work.
Here it is. These Chickpea Caesar Salad Wraps are hearty, fresh, and ridiculously crave-worthy.
They’re made with simple pantry ingredients, crisp romaine, creamy avocado, and a bold vegan Caesar dressing you’ll want to drizzle on everything.
It’s become one of my go-to meals,
and I hope it becomes a staple in your kitchen too.
For the Chickpeas
- Chickpeas – Use one 15-ounce can, drained and rinsed. These are the protein-packed base of the wrap.
- Garlic Salt – Adds quick, flavorful seasoning without needing extra ingredients.
- Onion Powder – Brings savory depth to the chickpeas.
- Smoked Paprika – Gives the chickpeas a subtle smoky flavor.
- Black Pepper – For a little kick and balance.
- Dried Parsley – Adds a touch of herby flavor and color.
- Oil – For pan-frying the chickpeas until slightly crispy.
For the Vegan Caesar Dressing
- Vegan Mayo – The creamy base of the dressing.
- Lemon Juice – Brightens and balances the flavors.
- Fresh Parsley – Adds fresh, herby notes.
- Garlic – Just one clove packs bold Caesar flavor.

- Caper Brine – Enhances the tanginess.

For the Wraps
- Large Wraps – Use your favorite kind (tortilla, whole wheat, gluten-free).
- Romaine Lettuce – Chopped and crisp, the classic Caesar base.
- Avocados – Sliced for creamy richness.
- Tomatoes – Fresh slices add juiciness and color.

Ingredients
For the Vegan Caesar Dressing:- ½ cup vegan mayo
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
- 1 garlic clove, peeled
- 1 teaspoon capers
- 2 teaspoons caper brine
- 1–2 teaspoons spicy mustard
- ½ teaspoon black pepper
- Salt to taste
- 1 (15-ounce) can chickpeas, drained and rinsed
- ½ teaspoon garlic salt
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- 1 teaspoon dried parsley
- 1 tablespoon oil
- 4 large wraps (your choice: flour, whole wheat, gluten-free, etc.)
- 2 heads romaine lettuce, chopped
- 2 avocados, sliced
- 2 tomatoes, sliced
Instructions
- Make the Dressing:
Add all the dressing ingredients to a food processor or blender. Blend until smooth. Taste and adjust seasoning if needed. Chill in the fridge until ready to use. - Prepare the Chickpeas:
In a bowl, toss the chickpeas with garlic salt, onion powder, smoked paprika, black pepper, and dried parsley.
Heat the oil in a skillet over medium heat. Add the chickpeas and sauté for about 5 minutes, stirring often, until slightly crispy. Remove from heat and set aside. - Assemble the Wraps:
In a large bowl, toss chopped romaine with the Caesar dressing (if serving immediately).
Lay out each wrap and layer with dressed romaine, chickpeas, avocado slices, and tomato. Roll tightly, slice in half, and serve.
- If you're prepping these wraps in advance, keep the dressing separate and add just before eating to keep the lettuce crisp.
