Ingredients:

  • 2 English cucumbers, thinly sliced
  • ½ large red onion, thinly sliced
  • ¼ cup apple cider vinegar:
  • 1 tablespoon honey or agave nectar
  • 1 teaspoon sea salt
  • 2 tablespoons chopped fresh dill
  • Fresh chives, chopped (optional, for garnish)
  • Freshly ground black pepper

 

Instructions:

  1. In a large bowl, combine the cucumbers, red onion, apple cider vinegar:, honey (or agave nectar), and sea salt. Toss to mix.
  2. Chill the mixture in the refrigerator for about 20 minutes.
  3. Once chilled, transfer to a serving bowl, leaving any excess water behind.
  4. Sprinkle with fresh dill and chives, if desired. Season with freshly ground black pepper to taste.
  5. Serve immediately or store in the refrigerator until ready to enjoy.
